Vegetarian Burritos filled with rice

I tried some chicken and rice burritos from a recipe in a mexican book. Not a big fan. However i've loved some similar stuff in my local mexican restaurant. To make it more appealing for me to cook i've made up my own recipe around veg and a lime/tomato flavour.

To serve 4 you require:
2 medium onions
3 mixed peppers
1 lime (juice of)
200g chopped tomatoes
400g chickpeas
50g cheddar cheese
1/2 cup of rice
8 tortillas

Herbs/Spices - Basil (1 tsp), Oregano (1/2 tsp), Cayenne Pepper (1/4 tsp), Salt to taste.

Boil some water and have it ready to cook the rice. Heat some oil in a big pan and throw in the chopped onions along with some garlic. Then when that's done, put in the peppers, diced. Around the time you put the peppers in, put the rice in to cook. Add the spices in a few minutes after the peppers. When the rice is about 80% cooked, drain it and then add the tomatoes (and some tomato puree) to the main pan, then throw the rice in also. After that, add the lime juice and the chickpeas. The rice will soak up the tomato juice to finish cooking. Add a little water if need be. Also add on the cheese, finely grated.

Stir this all together for a few minutes until it's hot and cooked. Heat up the tortillas and then put 1/8 of the mixture into the centre of each tortilla and fold them into burritos and serve. It's extremely easy to put some aside in the fridge or freezer as you just reheat the sauce, heat up a few tortillas and then serve. No hassle.
