This is a really simple sauce which only takes a few minutes but tastes fantastic. Perfect for a little lunch or evening meal with lots of bread etc. I tend to add a little onion to it but a traditional recipe wouldnt.
To serve 4 you require:
1 garlic clove, crushed
1/2 medium onion (optional)
800g (2 tins) chopped tomatoes
1 tsp sugar
Herbs/Spices - Handful of fresh torn basil leaves (or dry), Black Pepper.
Heat the oil in a large pan on a medium/high heat. If using onions, cook them (on a medium heat, finely chopped) with the garlic first. Otherwise throw in the garlic, tomatoes, sugar and basil leaves. Let it simmer down until thick for 10-15 minutes and add some salt and a little black pepper. Either arrange nicely on some pasta or throw the pasta into the sauce and toss until well mixed before serving. Good with penne, spaghetti and fusilli.
