Chicken Fajitas
It took me a second to get over the serious lime taste in this stuff but they really
taste very nice. It's a great change from rice and pasta dishes and using
pre-made tortillas from the supermarket makes serving this stuff dead easy. Feel
free to use soured cream and guacamole also. Add it
much like the salsa onto the food at the end or on the side.
To serve 4-6 you require:
4 skinless chicken breasts
2 medium onions
3 mixed peppers
4 tbsp sugar
2 limes (juice and finely chopped zest)
2 tbsp lemon juice
400g pinto beans (optional)
2 tortillas per person
tomato salsa to serve (1-2 little jars?)
Herbs/Spices - Oregano (1.5 tsp), Cayenne Pepper (1/2 tsp), Ground Cinnamon (1.5 tsp),
BBQ spices (2 tsp).
Marinate the chicken (sliced into small strips) in a bowl containing the sugar, spices,
lime juice and zest and lemon juice. Leave this for around an hour and mix it well
when you put it in. Occasionally mix it up to even the flavour.
Stir-fry the chicken and marinade on a very high heat for a couple of minutes until
it's done
At the same time, have a hot pan with olive oil ready and stir fry the the onions (thinly sliced)
and then the peppers (strips) and then add the chicken and allow it to
cook for a couple of minutes until everything looks good.
Serve at the table with a bowl full of salsa, a plate with the chicken and vegetables and
then a plate with the warm tortillas on it. Place the meat down the centre of a flat
tortilla, top with salsa and then fold one side over it and then the other to make a neat
package. If you're serving them pre-made, you can use cocktail sticks to make them hold
their shape. For a bigger meal put some rice on the side.
