Another Italian food that i've fallen in love with. Bruschetta can be served in several different ways, as I learn or create more, i'll add them here.
To serve 4 you require:
450g fresh ripe or tinned italian tomatoes
75g diced red onion
110g soft butter
1 garlic clove
Green/Rocket Pesto
A loaf of ciabatta or 4 ciabatta rolls
Salt, Black Pepper, Fresh Basil
Peel, deseed and chop the tomatoes if fresh. Toss in with the red onion. Blend around 1 tbsp of extra virgin olive oil with 2 tbsp of the pesto. Regular green pesto is great but I find rocket pesto is a nice twist. Pour this over the tomatoes. Add some chopped fresh basil, salt and black pepper and mix well. Brush some butter (mixed with garlic) over some heated ciabatta slices/rolls. Spoon over the tomato mixture and season.
Bruschetta with Mozzarella:
Follow the recipe for regular bruschetta above but then layer some thick slices
of mozzarella on top of the tomato and then spoon a little pesto on top of this
to garnish it. I find this is just the best italian lunch.
