Beef with Green Peppers in Black Bean Sauce
Chinese food daunts me. This was my first ever authentic chinese meal
though and it tasted superb. Just like the local take-away. Hopefully
more will follow.
To serve 4 you require:
350g Beef Steak (Rump)
1 onion (chopped finely)
1-2 green peppers (chopped into chunks)
1 spring onion
2 red chillies
3 tbsp Black Bean Sauce
For the Beef Marinade
2 tsp Sesame Oil
2 tsp Rice Wine (or Chinese cooking wine)
1 tbsp light soy sauce
1/2 tbsp dark soy sauce
2 tsp cornflour paste
1/2 tsp sugar
1/2 tsp baking soda
Cut the beef into thin strips. Mix together all the ingredients for the marinade
in a shallow dish. Add the beef and coat both sides of it. Allow it to marinate
for at least 2 hours.
Stir fry the beef in a pre-heated hot wok and some vegetable oil. When the colour
has changed (about 1 minute) add the remaining veg and stir fry for another minute.
Add the black bean sauce and stir fry for one more minute then serve.
