This is another really simple sauce but has a great kick to it. You can make it as spicy as you prefer and it makes a great meal served on pasta with a little bread. Note that it's name means "angry" and is derived from the heat and flavour of the sauce.
To serve 4 you require:
3 garlic cloves, sliced
1 medium onion
800g (2 tins) chopped tomatoes
2 medium/hot chillis
Herbs/Spices - 1/2 Handful of fresh torn basil leaves (or dry), Black Pepper.
Heat some oil on a medium heat and then add the onions (finely chopped), garlic and chillis (very finely chopped). Once cooked, add the tomatoes and basil and allow to simmer and thicken. Add a little salt and black pepper and serve on or tossed with pasta. Good with penne, spaghetti and fusilli.
